Slow Cooker Mild Beef Chilli

Ingredients:
2 T. extra virgin olive oil
1 medium yellow onion, diced
2 large carrots, diced (1 1/2 cm chunks)
2 medium celery stalks, diced
2 medium red bell peppers, diced (1 1/2 cm chunks)
1½ lbs. ground beef
2 x 420g canned black beans
2-3 garlic cloves, minced
2 t. dried oregano
1 T. ground cumin
1 t. cayenne pepper
2 T. tomato paste
1 x 400g. canned peeled Italian tomatoes, undrained
1 c. water
Sea salt and black pepper, to taste
1 beef stock cube
Optional toppings:
Fresh cilantro leaves, chopped
Directions:
- In a small "Crock-Pot" or slow cooker (3.5 L capacity), add in the onion, garlic, carrots, celery, bell peppers, minced beef, and the rest of the ingredients. Mix the ingredients well and cover.
- Set the slow cooker on high for four hours.
- Adjust salt and pepper and give the chilli a good stir.
Pair with your side dish of choice and enjoy while hot.
