This Slow Cooker Mild Beef Chilli  is flavor-packed with its satisfying combination of fresh vegetables and black beans. A nice blend of herbs and spices pulls it all together into a delicious and filling meal. Eat with mashed potatoes or your favorite side dish for a nourishing, feel-good dish.

Ingredients:

2 T. extra virgin olive oil
1 medium yellow onion, diced
2 large carrots, diced (1 1/2 cm chunks)
2 medium celery stalks, diced
2 medium red bell peppers, diced (1 1/2 cm chunks)
1½ lbs. ground beef

2 x 420g canned black beans
2-3 garlic cloves, minced
2 t. dried oregano
1 T. ground cumin
1 t. cayenne pepper
2 T. tomato paste
1 x 400g. canned peeled Italian tomatoes, undrained
1 c. water

Sea salt and black pepper, to taste

1 beef stock cube



Optional toppings:
Fresh cilantro leaves, chopped

 

Directions:

  1. In a small "Crock-Pot" or slow cooker (3.5 L capacity), add in the onion, garlic, carrots, celery, bell peppers, minced beef, and the rest of the ingredients. Mix the ingredients well and cover.
  2. Set the slow cooker on high for four hours.
  3. Adjust salt and pepper and give the chilli a good stir.

Pair with your side dish of choice and enjoy while hot.
