Best Creamy Potato Bake
Today I'm sharing with you my Best Creamy Potato Bake. It is my winning potato bake recipe not just because I am very happy with the taste but also because my family loved it. The cooking process ensures that the potatoes are of the right doneness which is for me, soft but not too soft.
With this recipe, you do not need a very long baking time. It is on the creamy side, which my family preferred. This recipe was inspired by my late mother-in-law and I always remember her when I make this dish. For cooking time, you can cook this dish for just under 1 hour and 15 minutes.
I recommend following the cooking times for the different ingredients to achieve best results. Our aim is to achieve the right texture for the potatoes. You may use any cheese on hand but I recommend using cheese with a stronger taste such as extra tasty cheese. You may garnish it with chopped fresh parsley if you wish.

Ingredients:
1.5 potatoes, sliced thinly ( around 2 cm)
1 tsp. salt (for boiling the potatoes
200 g. bacon, diced
1 large brown onion, chopped
1 packet spring vegetables simmer sauce, 30 g.
1/2 tsp. salt (to season the dish)
1/2 tsp. black pepper
cooking cream, 500 ml
cooking oil (1 tsp to cook the bacon and 1 tsp to cook the onions)
1/2 cup extra tasty cheese
Method:
Prepare the Potatoes:
Peel and slice the potatoes into 2 cm thickness.
In a pot, boil the potatoes in a large pot with water just covering the potatoes. Add 1 tsp salt and boil for 15 minutes.
Turn off the heat, drain the potatoes and set aside.
Prepare the oven:
Preheat the oven to 200 C.
Prepare the cream mixture and the rest of the ingredients:
1. In a mixing bowl, pour the cream and mix in the simmer sauce. Season with salt and pepper.
2.In a frying pan, cook the bacon in oil for 5 minutes. Transfer bacon to a container.
3. In the same frying pan where you cooked the bacon, cook the onions in oil for 4 to 5 minutes by stirring well.
4.In a large baking dish ( I used one that is 9 inches by 13 inches, pour in 1/4 of the cream mixture. Add a layer of potatoes, 1/2 of the cooked bacon, 1/2 of the cooked onion and the cheese.
5. Pour the rest of the cream mixture into the baking dish.
6.Put into the baking dish the rest of the potatoes, onion, and bacon.
7. Cover the baking dish with aluminum foil and bake in the oven for 30 minutes.
8. Remove the aluminum foil from the baking dish and bake further for 20 minutes.
9. Serve while hot with side dishes such as garlic bread and a garden salad.
